Baingan Masala Recipe.

Ingredients:

·       5 to 6 Brinjals ( medium size)

·       3 chopped Onions

·       1 big chopped Tomato 

·       1 ½ tablespoons Ginger Garlic green Chilies and Coriander paste

·       1 ½ tablespoons red Chili powder

·       1 teaspoon Turmeric

·       ¾ tablespoons cumin Coriander powder

·       1 tablespoons garam Masala powder

·       1 teaspoon Mustered seeds

·       1 teaspoon Cumin seeds

·       ¼ th cup crushed Peanut

·       Curry Leaves

·       1 Bay Leaves

·       Pinch of Asafoetida

·       Oil

·       Salt

·       Chopped Coriander

                                             

Method:

Wash the brinjal cleanly in running water. Then cut into the long pieces and keep it into the salt water.

 

Heat a kadai on a medium flame, pour 3 tablespoons of oil. Once oil heated, add mustered seeds and cumin seeds. When both started spluttering, add curry leaves and bay leaves. Then, add some ginger garlic paste into the tadka. Saute well.

 

Now add chopped onions. Cook the onions till change the colour. Again add some ginger garlic paste. Mix it well for 2 minutes. Now add chopped tomatoes. Cook till tomatoes goes mushy. Cook the onions and tomatoes nicely.

 

Now add, Red chili powder, turmeric, cumin coriander powder and garam masala powder. Mix it properly. Now add crushed peanut, salt and chopped coriander. Mix it well.

 

Now add pieces of brinjals into this masala. Mix this brinjal into the masala till leaves some oil. Add 1 glass of water. Add salt if required. Mix it well. Allow to boil. Once nice boil come. Slow down the flame. Keep lid on a kadai. Allow to cook on a slow flame for 10 to 12 minutes.

 

 

After 10 minutes, check whether brinjal cooked or not. If not. Keep the lid for another 5 minutes.

Remove the lid, once brinjal are cook nicely, mix the subzi. Don’t keep much water into the subzi.  Allow to observe the water on a high flame.

 

Brinjal masala is ready to serve.

Garnish with chopped coriander and serve hot with roti.
