Batata Vada Recipe. Maharashtrian Street Food.

Ingredients:

·      ½ kg Boiled Potatoes

·      Ginger, garlic and green Chilies Thecha

·      Chopped Coriander

·      Crushed Coriander seeds

·      1 teaspoon Turmeric

·      Curry Leaves

·      Asafoetida

·      Mustard seed

·      Salt

·      Oil

  • For Gram flour batter

ü 2 cup Gram flour ( Besan)

ü 1 tablespoon Rice flour

ü Salt

ü Turmeric

ü 1 teaspoon Red Chili Powder

ü Water

Method:

1. Heat a pan on a medium flame, pour 1 tablespoons of oil, and add mustard seeds. Once mustard seeds started fluttering, add crushed coriander seeds, curry leaves, asafoetida and ginger garlic green chilies thecha.

Mix well. Once, raw smell goes, add smashed boiled potatoes, turmeric and salt to taste. Mix well. Switch of the flame. Add chopped coriander into the potatoes. Mix the potatoes masala evenly. Allow the mixture to cool. Now make a ball of mixtures whichever size you want. Keep aside.

 

2. For making batter, in a big bowl add chickpeas flour, rice flour, red chili powder, turmeric, salt and water. Don’t make a very thick or thin batter. Batter should be in a medium consistency.  

 

3. Heat a vessel with an oil for frying batata vata. Now for chutney we want some besan chura. (Chura means, the small quantity batter drops while frying vadas which we can collect together call Chura or you can fry separately as well).

4. First, in a hot vessel we dropped some batter drops with the help of hand. Fry till brown. Remove that fried chura on a tissue paper. At least make the 1 small plate of chura. Once the chura done. Either slow down the flame or switch off the flame.

Now in a mixture jar take all the fried chura, red chili powder, 5 to 6 garlic cloves and salt. Grind all as a fine mixture and the chutney is ready.

 

5. Now start making, Batata Vada. Heat a vessel on a medium flame. Once oil heated, take potatoes ball press gently on the palm. Do not make flat vadas. Put the balls in the chickpea flour batter. Cover the whole vada with the batter and drop in the hot oil one by one. Fry both the sides of vadas till golden brown and crisp. Now remove the vadas on a tissue paper so absorb extra oli. This how you can make remaining vadas.

Serve hot with paav and churra chutney. You may also add up coconut chutney for enjoying this delicious batata vada.
