Dry Fruits Kulfi.

Ingredients:

  • 1 litre Buffalo milk
  • ½ Cup Sugar
  • Mix dry fruit mixture
  • 2 tablespoon milk powder
  • Saffron Strands 
  • Water
  • Kulfi mould or small paper cups

Method:

Heat a litre of thick milk in a pot. Let it boil for 15 minutes. Stir it.

 Take a cup of milk, from that boiling milk. Keep aside and let it cool.

Let it boil the milk till thick consistency. Add some saffron strain into the milk to make the kulfi more flavorful.

From other side heat a pan. Add Teaspoon of ghee in it. Spread the ghee all over the pan. Now add sugar in the pan. Let it melt the sugar. You can see after 3 to 4 minutes sugar will starts melting. Now with the help of spatula, mix the sugar. Once all the sugar dissolved properly add 3 to 4 tablespoon of water in it. Mix immediately.  Switch off the gas.

Now add this caramelized sugar into the boiling milk. Mix it in small small portion. Don’t add all the caramelize sugar in one go into the milk.

Also stir the milk with the help of spoon.

Stir well. Now add the milk powder into the milk which we already kept aside in the cup. Mix well. And add this mixture into the boiling milk.

Stir the milk slowly.  And allow cooking for another 10 minutes. Now time to add dry fruit powder into the milk.

Mix well. Keep the gas on a low flame only. We have to achieve thick consistency of milk. So, boil it 10 to 15 minutes more.

Once you get the thick consistency of milk which is shown in the picture switch off the gas.

Now let cool this mixture in a room temperature. It takes at least 30 minutes.

Once mixture cool down. Fill this mixture in a kulfi mould and you can use small paper cups also to set the kulfis. Cover kulfi mounds. And cover the paper cups with the help of tissue papers. Now keep this mounds and cups in a freezer.

Kulfi sets in an 8 to 9 hours.

You serve this delicious Dry fruit kulfi chill.
