Potato Drumstick Subji.

Ingredients:

  • 2 big size potatoes
  • 2 Drumsticks
  • 2 big size chopped onions
  • 1 big size chopped tomatoes
  • Curry leaves
  • ½ teaspoon mustered seeds
  • 1 teaspoon red chili powder
  • ½ teaspoon turmeric
  • Salt
  • Oil
  • Chopped coriander
  • For Dry Masala:
    • 1/3 cup roasted peanut
    • Shredded coconut
    • Coriander leaves
    • ½ teaspoon cumin
    • ½ teaspoon coriander
    • 3 to 4 garlic

Method:

Peel the potatoes and cut into the square pieces also cut the drumstick into the finger shapes. Keep the potatoes and drumstick into the water.

For preparing dry masala, add coconut, peanut, cumin coriander seeds, coriander leaves and garlic. Make a fine paste.

Now heat a kadai on a medium flame. Add oil. Once oil heated add mustered seeds and curry leaves. Now add Chopped onions. Saute well. Cook till onions change the colour. Now add Chopped tomatoes and salt. Mix well. Allow to cook till tomatoes mushy.

Once tomatoes cook add potatoes and drumstick into it. Mix well. Keep the lid and allow to cook for 10 minutes.

Check whether potatoes cook or not. If it’s cook then, add dry masala, red chili powder, turmeric and salt into the subji.  Mix well.

Add half a glass of water. Mix well. Keep the lid on a kadai and cook the subji for another 5 minutes. Remove the lid after 5 minutes. Add Chopped coriander for garnishing and switch off the gas.

Delicious subji is ready to serve with roti.
