Wash the potatoes cleanly. For this recipe, you can remove the skin of potatoes. For this subzi, I am not removing the skin of potatoes. You can do it the way you want.

After cleaning the potatoes, cut the potatoes into four equal parts. And cut a very thin slices of those potato cuts. After Cutting of all the potatoes, put into the water.

Now heat a pan on a medium flame, pour 2 tablespoons of oil. Once oil is heated, add mustard seeds. After fluttering of mustered seeds, add chopped onions. Cook the onions till change the colour. Now add red chili powder and turmeric. Mix it. Now remove the water from the slices of potatoes. Add those slices of potatoes into the onions. Add salt as per the taste. Mix well. Keep lid on a pan. Allow to cook for 5 to 7 minutes. Remove the lid. Mix once. Check whether potatoes cook or not. If not. Cook for another 2 to 3 minutes. Mix it properly. Now the subzi is ready to eat.
