Ingredients:

·      1 cup Parboiled Rice

·      1 cup normal Rice

·      1 cup split black Gram Lentils ( Urad Dal )

·      ½ cup flattened Rice

·      Water

·      Salt

·      Oil

Method:

Mix both rice and wash cleanly and socked in the water. Same way wash Urad Dal and socked in another pot. Sock rice and Dal for at least 5 to 6 hours. Wash and soak flattened rice, Before 1 hour of grinding.

After 6 hours grind Dal, rice and flattered rice together. Don’t use much water for grind. Grind all the ingredients in a smooth paste. Now transfer the idli batter in a large container mix it well. The final batter should not be very thick or watery. Cover it container with plate and keep it in room temperature for minimum 8 to 10 hours.

Note: Fermentation process is totally depends on the season and the temperature. Usually in hot season batter can easily get fermented but in cold season it takes time.

In hot season you add the salt in the batter before you making an idli.

In rainy season or winter season fermentation process is quite slow. So you may add the salt after grinding of batter for better fermentation of batter.

After 10 hours batter is ready for idli.

Grease idli mould with oil. Gently mix the batter. Pour the portion of batter with a spoon in a grease moulds.

Keep all the filled moulds in a pre-heated idli steamer. Steam the Idlies for 12 to 15 minutes.

Serve the hot Idlies with coconut chutney and sambar.
