  • Vegetables:
  • 4 to 5 Small size Potatoes ( Aloo)
  • ½ Cup Green Peas
  • ½ Cup Finely chopped tendli
  • 5 to 6 Medium size fresh brinjal (Baingan)
  • 1 Long size sweet potato (Ratalu)
  • 50 to 100 gms Guar (Gavar)
  • For Masala Stuffing:
  • 1 Cup grated coconut
  • ½ cup roasted peanut
  • 2 tablespoon white sesame seeds
  • Chopped coriander
  • 2 green chilies
  • 10 to 15 garlic cloves
  • 1 inch ginger
  • 2 tablespoon red chili powder
  • ½ teaspoon turmeric
  • 1 tablespoon cumin coriander
  • 1 Teaspoon Salt
  • 1 tablespoon cumin
  • 1 teaspoon carom seeds
  • 5 to 6 chopped garlic
  • 2 dry red chilies
  • 1 bay leaf
  • 4 to 5 black pepper
  • Small piece of cinnamon
  • 1 teaspoon asafoetida
  • 5 to 6 tablespoon oil
  • 1 Bowl tomato puree


First will prepare the masala for stuff the vegetables.

In a mixture jar add, roasted peanuts, white sesame seeds, ginger, garlic, chilies, red chili powder, turmeric, salt and cumin coriander. Grind them coarsely. Now add this mixture into the grated coconut. Also add chopped coriander. Mix well. The masala is ready to stuff.

Now clean the all veggies. Peel out the skin of potatoes, sweet potatoes. Wash it cleanly in water. Cut the sweet potato in square shape. You make the four cuts, into the potatoes, Brinjal and tendli. Cut the gaur in two pieces.

Now all the veggies are ready. Will start filling the veggies, before that make a two portion of the masala. Here, we using a one portion for filling the masala in veggies and remaining one will use at the time for cooking the undhiyo.

Now fill the masala in brinjals, potatoes and tendli.

Now heat a kadai on a medium flame, add oil. Add green peas, gaur, some sliced tendli and sweet potato. Fry them till half cook. Remove it from the kadai.

In a same kadai add cumin seeds, carom seeds, asafetida, dry red chilies, black pepper, cinnamon and bay leaf. Once cumin seeds splutter add, chopped garlic. Mix well. Now add tomato puree. Stir it for 2 minutes. Add 1 teaspoon red chili powder and salt on it. Mix well.

Keep the gas on a slow flame. Now add stuffed veggies and mix well. Keep the lid and allow cooking for some minute. Now add 2 glass of water. After 10 minutes of cooking, add fried veggies on it. Mix well.

Keep the lid on it. Once all the veggies cook well add remaining masala on it. Mix well. Allow to cook for another 5 minutes. Delicious undhiyo is ready.

Serve the undhiyo with phulka or roti or puri.
