For Ragda:

·      1 cup Soaked white Chickpeas

·       1 tablespoons of Oil

·       Pinch of Asafoetida

·       1 teaspoon Cumin

·       1 tablespoons Ginger Garlic paste

·       1 tablespoons red Chili powder

·       ½ teaspoon Turmeric

·       1 tablespoons Cumin Coriander powder

·       1 tablespoons Garam Masala powder

·       Chopped Coriander

·       Salt

·       Water

For pattice:

·       5 to 6 boiled Potatoes

·       ½ cup soaked Poha ( flattened rice)

·       1 ½ tablespoons Ginger Garlic paste

·       1 teaspoon red Chili powder

·       1 teaspoon Cumin Coriander powder

·       ½ teaspoon Turmeric

·       1 teaspoon Garam Masala powder

·       Chopped Coriander

·       Chopped Mint

·       1 teaspoon Chaat Masala

·       1 teaspoon Amachur powder

·       1 tablespoons Kasuri Methi

·       Salt

·       Oil for Frying

For garnishing:

·       Green Chutney

·       Imli Chutney (Tamarind Chutney)

·       Yellow Sev

·       1 Chopped Onions

·       1 chopped Tomatoes

·       Chopped Coriander


For making ragda, heat small cooker on a medium flame, add oil. Once oil heated, add asafoetida and cumin. Once cumin fluttering, add Ginger garlic paste. Sauté well. Add soaked white chickpeas. Mix well. Now add red chili powder, turmeric, cumin coriander powder, Garam Masala powder and salt. Mix well. Add 3 glass of water. Add some chopped coriander. Mix well. Shut the cooker with lid. Allow to cook the white chickpeas till 4 to 5 whistles. Allow to cool down for 10 minutes. Open the lid after 10 minutes. You can see the chickpea are cook nicely. Mix it and cook for another 10 minutes on a slow flame. Ragda is ready.


For making pattice, take mixing bowl. Add boil potatoes, smashed them into the mixing bowl. In the potatoes, add soaked poha, red chili powder, turmeric, cumin coriander powder, Garam Masala powder, ginger garlic paste, kasuri methi, chat masala, amachur powder, salt, chopped coriander and mint. Mix all the ingredients nicely with the potatoes. Make a smooth dough. After that, make medium size of pattice.


Heat pan on a medium flame, add some oil. Fry the pattice from both the sides. Transfer it into the plate.


Now for platting the ragda pattice, place all the things on your dining table.


Take one serving plate, keep 3 to 4 pattice on the plate, and pour a spoon fill of ragda on the pattice. Spread one tabelspoon of green chutney and imly chutney on ragda. Now spread some yellow Sev, chopped onions, tomatoes and Coriander.
