  • 1 packet of Puri
  • For Ragda:
    • 1 Bowl Soaked white Peas
    • 1 Big Size Potato
    • 1 teaspoon salt
    • ½ Teaspoon Turmaric
    • 1 Tablespoon Ginger and chili paste
    • 1 Tablespoon powder of Cumin, coriander and fennel seeds
    • 1 Teaspoon Garam masala Powder
    • 1 Teaspoon Aamchur powder
    • Chopped coriander
    • 1 teaspoon cumin seeds
    • 1/3 Teaspoon Hing
    • Oil
  • For Imli ( Tamarind) Chutney:
    • 1/3 Cup Imli
    • ½ Cup Jaggery
    • 2 Dry Red Chilies
    • Salt
    • 1 Cup water
    • 1 Tablespoon powder of Cumin, coriander and fennel seeds
    • 1 Teaspoon Red Chili Powder
    • ½ Teaspoon Hing
  • For Green Chutney:
    • 2 Green Chili
    • 1 Cup Coriander
    • ½ Cup Mint
    • Salt
    • 1 Teaspoon powder of Cumin, coriander and fennel seeds
    • 1 Teaspoon aamchur Powder
    • 1 Tablespoon Dalya
    • ½ Cup grated coconut
    • Water for grinding
    • ½ inch ginger
    • 4 to 5 garlic cloves
  • 2 Chopped Onion
  • 2 Chopped Tomato
  • Chopped Coriander
  • Barik Sev


For making ragda, wash the soaked white peas. Add one chopped potato, water, turmeric and salt into the white peas. Mix well and pressure cook till 4 whistle. Switch off the gas.

Once cooker cool down, smash the peas and potatoes. Heat a kadai, add oil. Once oil heated, add cumin, hing and green chili and ginger paste. Sauté well. Now add mixture of smashed peas, add some water. Mix well. Now add garam masala powder, aamchur powder and Cumin, coriander and fennel seeds powder. Mix well. Add salt if required. Add chopped coriander. Allow to boil. After 2 to 3 minutes of boiling switch off the gas.

For making imli chutney. Boil the imli, red chili and jiggery in water. Allow to cook till imli gets mushy. Now grind this mixture till smooth paste. Then, transfer this paste into the sieve and with the help of spoon filter it the smooth paste. Now add, salt, red chili powder, hing and cumin coriander fennel seeds powder into this paste. Mix well. Cook for 3 to 4 minutes. Switch off the gas. Imli chutney is ready.

For green chutney. Grind the all ingredients which mentioned under the ingredient list.

Now at the time of serving. Get ready with all fillings.

Place the puries in the plate. Make a hole in the puries. Add 1 teaspoon of ragda in the puri. Then add chutneys, chopped onion, tomato, coriander on it. For final touch spread some fresh sev.
