·       ¼ th kg Elephant Foot Yam ( Suran)

·       For coating : ½ cup Semolina, 1 teaspoon red chili powder

·       For frying : Oil

·       For marination:

ü1 ½  Tablespoon Red Chili powder

ü1 Tablespoon Cumin Coriander powder

ü1 tablespoon Turmeric

ü2 tablespoon Ginger, Garlic, Green Chili, Coriander paste

ü5 to 6 pieces of Kokam




Clean the elephant foot yam in the running water and remove their skin with the help of knife. Now cut the yam in thin and square pieces. Clean this pieces in running water.

Now heat a pot with the water and 1 tablespoon of salt. Put all the pieces of yam into the water. Allow to boil till yam cook. It will take at least 7 to 10 minutes.

Meanwhile soak pieces of kokam into the ¼th cup of water for 10 minutes.

Now take mixing bowl, add ginger, garlic, green chilies, coriander pste, red chili powder, turmeric, and salt. Make a fine paste. Now, crush the kokam and squeeze the juice of kokam on the pieces of paste. Now the marination is ready.

Check the pieces of yam cook or not. Once it cook, turn off the flame. Remove the water from the yam. Transfer the pieces of yam into the plate. Apply the masala marination on the pieces of yam. Make sure the pieces of yam is properly coated by kokam juice and marination.

Marinate those pieces for at least ½ hour. After ½ hour. Heat a frying pan on a medium flame. Pour 3 to 4 tablespoon of oil. Till then, take a semolina in a plate and add red chili powder and mix it properly. Once pan is heated, take pieces of yam one by one and coat it in a semolina and place it on the pan for frying.

As Yam is already cooked, so it will not take much time to fry.

Fry the pieces of yam from both the side till brown and crisp. Fry all the pieces like this way.

Serve hot with tomato sauce. Children’s are love to eat this fries.
