  • ½ Teaspoon Fennel Seeds

Take one plate, add wheat flour. Into the flour add gram flour, salt, oil, ghee, carom seeds and add some water. Make a tide dough. Keep aside. Allow to rest for 15 minutes.

Now take one mixing bowl. Add boiled potatoes. Smashed the potatoes in to the bowl. The potatoes should be mashed very well.

Now add red chilli powder, chopped green chili, cumin coriander powder, garam masala powder, amchur powder, salt, fennel seeds, chopped ginger and chopped coriander. Now mix all this spices into the potatoes and make a soft mixture.

Now start making parathas. Make some balls from the dough. Take one ball and place it on a rolling board. Dust some wheat flour on to the ball. Press the ball with the palm and roll it to a medium size circle about 5 inch diameter. Now place the potato mixture in the centre of the circle. Take the edges and joint them together. Press the joints and again roll the ball on palm.

Keep this stuffed ball on a rolling board. Sprinkle some flour on it. And roll the paratha smoothly. The parathas should not be too thick or thin.

Now heat the tava on a medium flame. Once tava heated place the paratha. Don’t cook the paratha on a high flame or slow flame. Allow to cook from the base then flip the paratha and then cook from another side. Now spread some ghee on it. And flip it. Apply the ghee from the both the side. You can see nice golden colour come on the paratha.  Cook the paratha till crisp. Once cooked properly, remove it from the tava.

Like this you can make parthas.

Serve hot with sweet curd or pickle.
