Ingredients:

  • 4 to 5 Big Size Potatoes
  • 2 Chopped Onion
  • 4 to 5 Chopped Green Chilies
  • 5 to 6 Chopped Garlic Cloves
  • ½ inch Chopped Ginger
  • Curry Leaves
  • 1 Teaspoon Mustard Seeds
  • 1 Teaspoon Urad Dal
  • Pinch of Asafodieda (Hing)
  • 3 to 4 tablespoon oil
  • Salt
  • 1 teaspoon Turmeric
  • Chopped Coriander

Method:

Wash the potatoes cleanly. Then, cook the potatoes with 4 whistles in a pressure cooker. Once potatoes cook, remove it from the cooker and allow to cool. Remove the skin of potatoes and make a small square shape pieces. Now apply some turmeric and salt to the potatoes and toss it.

Now heat a kadai on a medium flame. Pour some oil. Once oil heated add mustard seeds and urad dal. Once mustard seeds splutter, add asafoetida, curry leaves, chopped garlic and ginger.

Once garlic change the color, add chopped onions and chilies. Saut’e well. Cook the onions till change the color. Once onion cook nicely. Add some chopped coriander and turmeric powder in it.

Now add turmeric and salted pieces of boiled potatoes. Mix well. Keep the gas on a slow flame and allow to cook for another 3 to 4 minutes. Again mix well.

Now add some chopped coriander into the subzi. Mix well.

Serve hot with puri or phulka.
