  • ½ kg Pumpkin (Bhopla / Kadoo)
  • 250 Gms Jaggery
  • ½ Cup Ghee
  • 1 Tablespoon Green Cardamom Powder
  • 2 Bowl Wheat Flour
  • 2 to 3 Tablespoon Rice Flour
  • ½ Teaspoon Salt
  • Water for Kneading
  • 1 Plate Wheat Flour for dusting
  • ½ cup Sesame Seeds
  • ½ liter Oil for frying


Firstly, remove the skin from the pumpkin, then shred it finely on shredder.

Now heat a non-stick pan on a medium flame. Add ghee in it. Then, add shredded pumpkin. Mix well. Allow to cook. Keep lid on the pan.

Pumpkin have own water content. So you keep stir it till all water gets absorbed. Once shredded pumpkin cook properly. Add jaggery. Mix well. Allow to cook for another 10 minutes. Add green cardamom powder. Mix well. Switch off the gas. And allow to cool it down.

Then, transfer this mixture into the mixing bowl. Now add some salt, wheat flour and rice flour into this mixture. Mix well. And knead the dough with the water.

Dough not be too tight and not too soft. Keep aside for resting at least 10 minutes.

Now make a small balls of this dough like the way we make for puries.

Take the rolling board. Keep one ball on it. Dust the flour on a ball. And roll it. Make a small size puri. For the perfect shape, use any sharp plate and keep it on puri and press it with the hand.

You can easily get the round shape puri. Remove the extra dough from the sites.

Now spread some sesame seeds on the puri and press it with the hand. Like this make all the gharge.

Now heat kadai on a medium flame. Pour oil for deep frying. Once oil heated, put one one gharge into oil. Fry the gharge till golden brown.

Serve hot with tea.
