Bitter Gourd Subzi.

Ingredients:

·       1/4th kg Bitter Gourd ( Karela)

·       2 chopped Onions

·       ½ teaspoon Mustered seeds

·       ½ teaspoon Cumin seeds

·       ½ teaspoon Coriander seeds

·       1 chopped Green Chilies

·       2 to 3 chopped Garlic cloves

·       1 teaspoon red Chili powder

·       Curry leaves

·       ½ teaspoon Asafoetida

·       1/3 teaspoon Turmeric

·       1/3 cup grated Coconut

·       Chopped Coriander

·       Salt

·       Oil

Method:

Clean the bitter gourd in running water. Cut into two parts. Remove the seeds of all bitter gourd. Then, cut in thin pieces. After cutting, add ½ teaspoon of salt into the pieces of bitter gourd. Crush this with the help of hand to squeeze the green water. Remove entire green water. Wash the bitter gourd and squeeze the water again. And make it dry.

Now heat a pan on a medium flame. Put the sliced bitter gourd. Fry till change the colour for at least 5 to 7 minutes. Then remove the bitter gourd from the plate.

In a same pan, pour 3 to 4 tablespoons of oil. Once oil heated, add mustard seeds cumin seeds and some split coriander seeds. Then add asafoetida, curry leaves, chopped garlic and chilli. Then add chopped onions. Fry till onions change the colour. Then add red chili powder and turmeric. Mix well.

Now add fried pieces of bitter gourd into the onions. Add salt to taste. Mix it. Keep on a low flame for another 2 to 3 minutes. Again mix it. Then add shredded coconut and chopped coriander into the subzi.

Serve with Chapati or Roti and curd.
