Brinjal Drumsticks Sukkha Bhaji Recipe.

Ingredients:

·       4 to 5 Brinjal

·       2 long Drumsticks

·       2 Potatoes

·       1 chopped Onion

·       1 chopped Tomatoes

·       4 to 5 chopped Garlic cloves

·       3 to 4 chopped Green Chilies

·       1 Teaspoon ginger garlic paste

·       Curry leaves

·       1 teaspoon Mustard Seeds

·       ½ teaspoon Cumin seeds

·       ½ teaspoon Turmeric

·       ¼ th teaspoon Asafoetida

·       1/3 cup of shredded Coconut

·       Chopped Coriander

·       Salt

·       Oil

Method:

Clean all the vegetables in running water. Cut bringal in medium size. Cut drumsticks with a finger size and remove their skin. Remove potatoes skin and cut into square pieces. After cutting all this vegetable, put into the water.

Then, heat a vessel on a medium flame. Pour 3 to 4 tablespoons of oil. Once oil heated add mustard seeds and cumin seeds. After fluttering of both, add asafoetida, curry leaves and chopped garlic. Then, add chopped onions and chilies. Sauté for a minute. Once onions change the colour. Add ginger garlic paste. Fry till raw smell goes. Then, add turmeric. Mix once. Then, add all the cut vegetable into the onions. Add salt as per the taste. Mix it well. Slow the flame.

Keep dish on a vessel and pour half glass of water in the dish. It help to cook the vegetable. Don’t add the water into the subzi. You may cook the veggies with help of inner steam of the vessel.

After 5 to 7 minutes. Remove the lid. Check whether vegetable cooked or not. If it not cooked then, again put the dish on a vessel with water in it. And allow to cook for another 5 to 7 minutes.

After 7 minutes remove the lid. You can see the veggies are cook nicely then, add chopped tomatoes into the subzi. Mix well. Allow to cook for another 2 minutes till tomatoes cook. You may check taste of salt. Use salt if required. Once all the veggies cook nicely. Add shredded coconut and chopped coriander into the subzi.

 

Serve hot with roti. You may also enjoy with steam rice and spicy Dal.
