Ingredients:

  • 1 cup Parboiled Rice
  • 1 cup normal Rice (Any type of Rice)
  • 1/3 cup split Black Gram Lentils ( Urad Dal )
  • 1 cup Green Moong Dal
  • Water
  • Salt
  • Oil/ Ghee
  • 1 chopped Onion
  • Chopped Coriander
  • For Tempering (Tadka):
  • 1 teaspoon Cumin seeds
  • 5 to 6 Curry leaves
  • 2 chopped Chilies
  • 1 teaspoon Ginger Garlic paste
  • 1 tablespoon Oil

Method:

Mix both type of rice. Wash in running water and keep for soak in the water. Same way wash dals together (split black gram lentils, split & skinned green gram) and keep for soak in another pot.

Soaked rice and Dal for at least 5 to 6 hours. After 6 hours grind them together with very little water. Don’t use much water for grinding. Grind all the ingredients till become a smooth paste.

Now transfer the aape batter in a large container. Mix it well. The final batter should not be very thick or watery. Cover the container with plate and keep it in room temperature for minimum 8 to 10 hours.

Note: Fermentation process is totally depends on the season and the temperature. Usually in hot season batter can easily get fermented but in cold season it takes time.

In hot season you add the salt in the batter before you making an Aape.

In rainy season or winter season fermentation process is quite slow. So you may add the salt after grinding of batter for better fermentation of batter.

After 10 hours batter is ready for make Aape. Mix the batter with the spoon, add water for perfect consistency.

Then, add chopped onion, coriander and salt into the batter. Now we are temper the batter. Heat a tadka pan on a medium flame. Pour 1 tablespoon oil. Once oil is heated, add cumin seeds, curry leaves, chopped chilies and ginger garlic paste. Mix till raw smell goes. Now switch off the flame. Pour this tempering in aape batter. Mix the batter well. Final batter should be like shown in the picture.

Heat a non-stick aape tawa (aape maker) on a medium flame. When the aape maker is hot enough, add oil or ghee with a spoon. Pour the batter in the each cavity. Once all the cavities filled, keep lid over aape maker for 2 minute in a slow flame.

After 2 minutes, adjust the gas on medium flame. Cook the aape till brown and crisp. Then, turn the aape on another side and cook it same way. Then remove the aape from aape maker and go for another slot.

After completing of all the aape. Served it with coconut chutney.
