Ingredients:

  • 1 Kg fresh chicken pieces
  • 3 sliced onion
  • 10 to 12 garlic cloves
  • 1 inch chopped ginger
  • 2 green chilies
  • Chopped coriander
  • Oil
  • 2 glass boil Water
  • Salt
  • Dry Spices Mix:
    • 4 to 5 Dry Red Chilies
    • 10 to 12 Cashews
    • 1 Bay Leaf
    • 1 Tablespoon coriander Seeds
    • 1 Tablespoon cumin Seeds
    • 1 Teaspoon Poppy seeds
    • 1 teaspoon cloves
    • 1 teaspoon fennel seeds
    • 1 teaspoon black pepper
    • 1 star anise
    • 1 inch cinnamon
  • For Marination:
    • 1 tablespoon red chili powder
    • 1 tablespoon garam masala powder
    • 1 tablespoon cumin coriander powder
    • 1 teaspoon turmeric
    • 1 chopped green chili
    • ½ cup fried onion
    • 1 cup thick curd
    • 1 teaspoon salt
    • 4 to 5 tablespoon oil
    • 1 tablespoon ginger garlic paste

Method:

Wash the chicken pieces. Will marinate the chicken first; add red chili powder, turmeric, cumin coriander powder, garam masala powder, salt, green chilies, ginger garlic paste, fried onion, curd and oil. Mix well. Keep for marinating for at least 1 hour.

On other side, heat a kadai. Add all the dry spices as mentioned in the ingredients. Dry roast it. Remove it from the kadai. Now add oil. Once oil heated add sliced onion, garlic, ginger and chilies. Fry it till it golden brown. Switch off the gas. Allow to cool.

Now add dry spices in a mixture jar. Grind it till fine powder. Into this powder add fried onion mixture. Make a fine paste.

Now heat a kadai. Add oil. Once oil heated, add cloves, cinnamon, star anise. Now add grind masala into it, also add 1 teaspoon salt. Stir it for 5 minutes on low flame. Now add marinated chicken on it. Mix well till remove the oil.

Now keep the lid on a kadai and keep the gas on low flame. Keep it for 5 minutes. After 5 minutes, remove the lid. You can see chicken remove the oil. Now, add some chopped coriander. Mix well. Add boil water on chicken, mix well. Keep the lid on kadai and slow down the gas flame.

Allow to cook for at least 25 minutes on a low flame. After 25 minutes you can see the chicken tendered very well. Add salt if required. Once chicken cook, add chopped coriander for garnishing.

Switch off the gas.

Serve this delicious Hydrabadi Chicken with naan or roti or bhakari.
