Manglorian Fish Biryani.

Ingredients:

  • 4 pieces of Surmai fish ( Big size)
  • For Marinating the fish:
  • ½ cup thick curd
  • 1 tablespoon red chili powder
  • ½ teaspoon turmeric
  • 1 teaspoon cumin powder
  • 1 teaspoon cumin powder
  • 1 tablespoon biryani masala
  • Salt
  • 4 to 5 tablespoon oil
  • Chopped coriander
  • Chopped mint leaves
  • 1 tablespoon ginger garlic paste
  • ½ cup fried onion
  • For making biryani
  • 2 cup basmati rice
  • 4 to 5 tablespoon oil
  • ½ cup ghee
  • Dry spices:
  • 1 tablespoon cumin seeds,
  • 1 black cardamom ( Badi Ilayachi)
  • 3 to 4 bay leaf,
  • 2 cinnamon stick (1 inch each),
  • 7 to 9 cloves,
  • 7 to 8 black pepper
  • 2 Green cardamom
  • 1 Star anise
  • ½ bowl fried onion
  • 2 Chopped onion
  • 1 tablespoon ginger garlic paste
  • 2 Chopped tomatoes
  • Chopped coriander
  • Chopped mint leaves
  • 1 tablespoon red chili powder
  • ½  teaspoon turmeric
  • Salt
  • Oil
  • 2 tablespoon lemon juice

Method:

Wash the fish in running water. For Marinating the fish, take a mixing bowl. Add, curd, oil, red chili powder,  turmeric,  cumin coriander powder,  biryani masala,  salt, fried onion, ginger garlic paste Chopped coriander and chopped mint leaves. Mix well. Now add fish pieces into the marination. Apply all the masala on the fish. Keep it for at least 1 hour.

Now wash rice 4 to 5 times. Soaked into the water for 30 minutes.

Now heat a big size pot on a medium flame.  Add oil and ghee. Once oil heated, add coriander seeds, bay leaves, cinnamon stick, black cardamom, green cardamom, star anise,  cloves and black pepper.

Then, add Chopped onions.  Sauté well.  Cook for 2 minutes.  Now add ginger garlic paste.  Sauté well.  Add Chopped tomatoes.  Cook well. Then add red chilli powder, turmeric and biryani masala.

Sauté well. Now switch off the gas.  Keep the marinated fish on it, mix well.

Now on the other pot, heat the water for cooking rice. Once water boils, add all the dry spices into the water also, add salt and lemon juice. Keep the water little salty. Then add soaked rice, allowed to boil.

Once rice half cooked takes the one portion of rice and adds on the top of the fish. Spread some fried onion, chopped coriander and mint. Then, add another portion of cooked rice on the top. Then, spread fried onion, chopped coriander and mint.

Now add spoonful of ghee on the top of the biryani. Also add 1 cup of boiled water on the biryani.  (Here I used the boiled of rice water.)

Now keep the lid on tava and put some weight on it. Switch on the gas. Steam the biryani 5 minutes on high flame. Then, cook for another 10 minutes on slow flame.

Now put this pot on tava and keep the flame slow. Allow to cook for another 10 minutes.

Then, Switch off the gas.

Serve this delicious Manglorian Fish Biryani with raita.
