Manglorian Prawns Ghee Roast.

Ingredients:

  • 1 bowl fresh and clean prawns
  • 2 big size chopped onion
  • Curry leaves
  • ½ teaspoon turmeric
  • Chopped coriander
  • Salt
  • Oil
  • 4 to 5 tablespoon ghee
  • For Marinating prawns:
  • 1 teaspoon red chili powder
  • ½ teaspoon turmeric
  • Salt
  • 1 teaspoon ginger garlic paste
  • For masala paste:
  • 4 to 5 dry bedgi red chilies
  • 10 to 12 cashew
  • 1 tablespoon jaggery
  • 1 tablespoon tamarind pulp
  • 8 to 10 garlic cloves
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon poppy seeds
  • 1 teaspoon black paper
  • ½ teaspoon methi seeds
  • ½ teaspoon mustered seed

Method:

Firstly we will marinate the prawns. For marinating the prawns, we add red chili powder, turmeric, salt and ginger garlic paste. Mix well. Keep aside for 30 minutes.

Now soaked the dry chili and cashew in hot water for 15 minutes.

On a pan we will dry roast the spices. Add cumin, coriander, poppy seeds, methi seeds, black pepper and mustered seeds.  Sauté well.

Remove the spices from the pan.  And in a same pan add 2 tablespoon ghee. Now add marinated prawns into the ghee. Stir it. Keep the lid on a pan allow to cook. Keep stir it till prawns are fully cook.

On the other side, grind the masala. Add dry roasted spices in a mixture jar. Make a fine powder and now add soaked chilli, cashew, jaggery, garlic cloves and tamarind in it. Make a fine paste. So, the masala paste is ready for making prawns ghee roast.

Now, heat a kadai on a medium flame. Add 1 tablespoon oil and 2 tablespoon ghee. Now add curry leaves and chopped onion.  Sauté well.  Cook the onions on a slow flame till translucent. Then, add masala paste and salt.  Mix well. 

Keep lid and allow to cook for another 5 minutes.  Then add 1 glass water. Allow to boil. Then add cooked prawns in it.

Cook it for another 5 to 7 minutes.

At the end add some curry leaves and chopped coriander.

Serve this delicious “Manglorian Prawns Ghee Roast” with roti.
