Ingredients:

  • 1 bowl Methi Leaves
  • ½ Bowl boiled Green Peas
  • 1 tablespoon oil
  • 1 tablespoon ghee
  • ½ teaspoon cumin
  • 1 or 2 green cardamom
  • 1 bay leaf
  • 1 small size cinnamon
  • 1 tablespoon cumin coriander powder
  • 1 tablespoon garam masala powder
  • 1 tablespoon fresh cream
  • Salt
  • water
  • For gravy paste:
  • 2 chopped onions
  • 2 green chilies
  • 6 to 7 garlic
  • ½ inch ginger
  • 8 to 10 cashew
  • 2 chopped tomatoes
  • ½ cup water
  • 1 tablespoon oil

Method:

For making gravy paste, heat a pan or kadai on a medium flame. Add some oil. Once oil heated add chopped onions. Sauté well. Then add green chilies, cashew, garlic and ginger. Mix well. Cook them till change the color. Once onion goes golden brown, add chopped tomatoes. Add some salt and water. Mix well. Keep a lid on a pan and allow to cook for 5 minutes. When all the water goes absorbed switch off the gas. Allow to cool it down.

Take a mixture jar, add this onion tomato mixture. Grind them and make a smooth paste. So the paste for gravy is ready.

Now heat another pan, add some ghee. Once ghee heated add methi leaves. Stir it continuously. Add salt on it. Allow to cook for at least 5 minutes. Once it cook switch off the gas.

Now will start making methi mattar malai. Heat a kadai on a medium flame, add oil or ghee. Once oil heated add cumin seeds, bay leaf, green cardamom and cinnamon. Once cumin splutter add onion paste. Stir it. Cook that paste for at least 5 minutes on a slow flame. Now add cumin coriander powder.  Mix well.

Now add boiled green peas and cooked methi leaves into that paste. Mix well.

As we already add the salt in methi and gravy paste. Avoid adding the salt at this stage.

Once methi and green peas nicely mix it, add 1 glass of water. Mix well.

Allow to boil. Once boil come, add 1 tablespoon fresh cream into the subzi. Stir well. Now you check the taste of subzi. Add salt if required.

Now add 1 tablespoon garam masala powder. Mix well. Allow to cook for another 2 minutes then switch off the gas.

So, the delicious Methi Mattar Malai is ready to serve.
