  • Chicken ½ Kg
  • 1 Bay leave
  • Small piece of cinnamon
  • 1 green cardamom
  • 2 to 4 cloves
  • 2 to 3 tablespoon oil
  • 1 tablespoon red chilli powder
  • 1 teaspoon garam masala powder
  • 1/3 teaspoon turmeric
  • Salt
  • 2 glass of boil water
  • Chopped coriander for garnishing
  • For Masala Paste:
    • 2 Chopped onion
    • 2 green chilies
    • 7 to 8 garlic cloves
    • ½ inch ginger
    • 5 to 6 cashew
    • 5 to 6 almonds
    • ½ teaspoon salt
    • 2 tablespoon oil
  • For Marination:
    • 1 Cup curd
    • 1 tablespoon red chili powder
    • 1/3 teaspoon turmeric
    • 1 teaspoon Salt
    • 1 tablespoon cumin coriander powder
    • 1 tablespoon garam masala powder
    • ½ cup fried onion
    • 1 tablespoon oil
    • Chopped coriander and mint


First wash the chicken and transfer it into the bowl. For marination add red chilli powder, turmeric, cumin coriander powder, garam masala powder, salt, oil, fried onion and chopped coriander and mint. Apply all these spices to chicken and keep for marinating for at least 30 minutes.

For other side, heat a kadai for making masala. Add oil in kadai. Add chopped onion, garlic, ginger, green chillies, cashew and almonds. Mix well. Keep lid on it and allow cooking for 10 to 15 minutes. Add ½ teaspoon salt. Stir the onion till golden brown. Now switch off the gas. Allow to cool. Now grind this masala finely.

Now heat a kadai for making gravy. Add oil. Once oil heated add bay leave, green cardamom, cloves and cinnamon. Now add marinated chicken into this tadka. Sauté well. Keep lid on a kadai. Cook the chicken for 15 to 20 minutes. You have to stir the chicken in between. Add red chilli powder, turmeric and garam masala powder. Mix well. Cook for another 5 minutes. Now add masala paste into the chicken. Sauté well till remove oil.

Now add 1 glass of boil water into the chicken. Mix well and allow cooking for another 10 minutes. Add salt if required. (For marinating the chicken and masala paste we added a salt.)

For garnishing add chopped coriander and switch off the gas.

Serve the delicious Nizami Chicken Handi with roti and rice.
