Ingredients:

  • 4 potatoes
  • ½ bowl green peas
  • ½ bowl cauliflower
  • ½ bowl beans
  • ½ bowl chopped carrots and beetroot.
  • 2 chopped capsicum
  • 4 chopped onion
  • 4 chopped tomatoes
  • 4 tablespoon oil
  • 1 tablespoon butter
  • 1 teaspoon cumin
  • 2 tablespoon ginger garlic paste
  • 1 tablespoon kasuri methi
  • 1 tablespoon red chili powder
  • ½ teaspoon turmeric
  • 1 teaspoon cumin coriander powder
  • 2 tablespoon paav bhaji masala
  • Salt
  • 3 glass water
  • Chopped coriander

Method:

First we will cook the veggies. Potatoes, green peas, cauliflower and green beans. Mix this veggies, add some water and salt into this. In a bowl add chopped carrots and beetroot. Now pressure cook this veggies with 3 whistles.  

Once all the vegetable cook. Remove it from the pressure cooker. Smash those cooked veggies with smasher. Now heat a kadai on a medium flame. Pour the oil and butter. Once oil heated add, cumin seeds. Once seeds sputter, add chopped onion. Cook the onion till soft. Now add chopped tomatoes and capsicum. Stir well. Wait till tomatoes and capsicum goes mushy. Now add ginger garlic paste. Mix well.

Now add red chili powder, turmeric, and cumin coriander powder and paav bhaji masala. Mix well. Add some salt and kasuri methi. Again stir well.

Now add smashed veggies into this fried masala. Mix well. Now add water. The paav bhaji is not become too thick and not too runny. Keep it medium consistency. Mix well.

Stir continuously. Check the taste. Add salt if required. Allow to boil and cook for another 5 to 6 minutes. Add chopped coriander. Switch off the gas.

Serve this hot Paav Bhaji with Paav, some chopped onions, tomatoes, piece of lemon and of course with the butter.
