Paneer Veg Kurma Recipe.

Ingredients:

  • ½ cup Cauliflower (Ghobi)
  • ½ cup Green Peas ( Mattar)
  • ½ cup French Beans (Farsabi)
  • ½ cup Capsicums ( square pieces)
  • 1/3 cup Carrots ( small pieces)
  • 1 cup thick Curd
  • 1 tablespoons red Chili powder
  • 1 tablespoons Garam Masala powder
  • ½ tablespoons Cumin Coriander powder
  • ½ teaspoon Turmeric
  • 1 tablespoons kasuri Methi
  • Salt
  • 2 tablespoons clarified Butter
  • 1 tablespoons Oil
  • 1 teaspoon Cumin
  • 1 Bay leaf
  • 2 Cloves
  • 4 Black paper
  • 1 green Cardamom
  • ½ inch Cinnamon stick
  • For masala paste:
  • 2 chopped Onions
  • 1 chopped Tomatoes
  • 6 to 7 Garlic cloves
  • Small piece of Ginger
  • For soaking:
  • 10 to 12 Cashew
  • 1 tablespoons Poppy seed

Method:

Wash all the vegetables. Keep aside.

Soaked cashew and Poppy seed in a warm water for at least 20 minutes.

Now heat a kadai on a medium flame. Pour some oil. Add long sliced Onions into the oil. Fry the onions till turns golden brown. Then add Ginger garlic and tomatoes. Cook the tomatoes with onion for at least 5 to 7 minutes. Add 1 teaspoon salt into the onions tomatoes mixture. Switch off the flame. Allow to cool down.

Now take a mixture jar, add onion mixture and soaked cashew and Poppy seed. Grind it in a smooth paste. Keep aside.

Now heat kadai, pour some oil. And add the vegetable one by one. First add cauliflower and French beans. Cook it for 4 to 5 minutes, then add green piece, carrots. Keep a lid and cook for another 4 minutes till all vegetables gets cooked. Then, add capsicums and 1 teaspoon salt into the veggies and mix it well. Cook for another 2 minutes.

Once all the veggies cook properly. Remove it from the kadai and transfer to the plate.

Now in a same kadai fry the paneer for 2 to 3 minutes. Switch off the flame. Transfer those paneer into the plate.

Now in a same kadai, pour 2 tablespoon of clarified butter and add 1 tablespoons of oil. Once oil heated, add cumin, bay leaf, cinnamon stick, black paper, green cardamom, cloves. Now add grind paste of onions. Sauté well. Allow to cook for 3 to 4 minutes.

Till then, take a mixing bowl. Add whisk curd, Red chili powder, cumin coriander powder, Garam Masala powder and turmaric. Mix all the masala into the curd. Add this curd mixture into the kadai. Saute well with onion paste.

Fry all this masala at least for 5 minutes. Then add salt and kasuri methi. Mix again.

Note: Remember we had already add the salt in the onion paste. Also we had add the salt at the time of frying vegetable. So adjust the salt as per the requirement.

Then add all the fried vegetables in a masala. Mix well. Then, add ½ glass of water. Mix well. Kip a lid on a kadai and allow to cook for 5 minutes. Remove the lid add paneer and chopped coriander. Mix well. Cook for another one minute.Switch off the flame.

Serve hot with phulka or wheat roti or naan. Enjoy.
