Punjabi Aloo Baingan Subji.

  • 4 big size brinjal
  • 2 Potatoes
  • 2 chopped onion
  • 1 big size chopped tomatoes
  • 1 tablespoon ginger garlic paste
  • 1 teaspoon red chili powder
  • ½ teaspoon turmeric
  • 1 teaspoon garam masala powder
  • ½ teaspoon cumin powder
  • ½ teaspoon coriander powder
  • Chopped coriander
  • ½ teaspoon cumin
  • 2 bay leaf
  • Salt
  • Oil
  • 1 teaspoon Kasuri methi


Cut the brinjal in long pieces and peel the potatoes, cut into long pieces.  Keep those veggies in a water.

Heat a kadai or pan, pour oil. Once oil heated add brinjal and potatoes. Add salt, turmeric and sauté well. Keep lid and allow cooking.

Stir them. Once cook remove it from the pan. In a same pan add cumin seeds. Once cumin splutter add bay leaves and ginger garlic paste.  Sauté well then, add Chopped onions. 

Mix well. Once onion change the colour add Chopped tomatoes and salt. Mix well. Keep the lid and allow to cook till tomatoes mushy.

Once tomatoes cook, add red chilli powder, turmeric, cumin coriander powder and garam masala powder.  Mix well. Now add Chopped coriander and cooked brinjal potatoes into the mixture.

Mix well. Keep the gas on a low flame and allow to cook for another 2 minutes.  Now add crushed kasuri methi. Saute well.

Cook for more 1 minute.

Serve hot with roti.
