Rabdi Recipe | Dry Fruits Rabdi with Saffron Flavour.

Ingredients:

·       1 litre Milk ( Prefer buffalo milk)

·       ½ cup Sugar

·       ½ cup Kaju (Cashew)and Badam (Almond)

·       1 teaspoon Velachi-Jaifal (Cardamom-Nutmeg) powder

·       1/3 teaspoon Saffron

·       1 teaspoon Cornflower

·       1/3 cup Milk.

Method:

Dry roast the dry fruits on a pan. And make a thin slices. Keep aside.

Take a pot or a vessel with 1 litre of milk. Place on a gas stove on a medium flame. Allow to make a nice boil. Once milk boil, separate the malai from the vessels corner.

Allow to boil the milk till become half. Now add half cup sugar and cardamom- nutmeg powder into the boiling milk. Stir it well.

 

Now take normal temperature milk in small mixing bowl and add 1 teaspoon of cornflower. Mix it well. Once milk consistency comes to half, pour this mixture into the boiling milk.

 

Stir it continuously. Allow to boil the milk again for 10 minutes more. Now add sliced dry fruits into that milk. And add saffron. 

Once milk quantity comes to 1/3rd, switch off the flame.

 

Transfer the Rabdi into the big bowl. Now remove all the malai from the pot and mix it into the Rabdi.

Keep that Rabdi bowl aside for another 1 hour in room temperature. Once it cool down and set properly.

 

Now Rabdi is ready to serve.
