Restaurant Style Vegetable Khara Bhath.

Ingredients:

  • 1 cup Semolina ( Preferred Thick Rava)
  • Two medium size chopped Onion
  • 3 to 4 chillies
  • 2 teaspoons split black Gram ( Urad dal )
  • 1 Teaspoon Gram Dal (Chana Dal)
  • 1 teaspoons Mustard seeds
  • 5 to 6 Curry leaves
  • 1 Teaspoon Finely Chopped ginger
  • 1/3 Teaspoon Asafoetida
  • ½ Teaspoon Turmeric Powder
  • 1 Teaspoon Sambar Masala or Vangi Bhath Powder.
  • 1 Tablespoon Oil
  • 1 Tablespoon Clarified butter ( Ghee)
  • Coriander for garnishing
  • 1 Teaspoon Lemon Juice
  • Salt
  • 2 Glass water
  • Vegetable:
  • Green Peas (half cup)
  • 1 Chopped Capsicum
  • Carrot ( chopped in small pieces)
  • 1 chopped Tomatoes

Method:

Take 2 glass of water in small pot and heat for some time. Add 1 teaspoon of salt and green peas into the water and rest for the boil on a slow flame. Once peas gets boil, slow the flame.

On the other side, heat a vessel on another gas stove. Roast the semolina for 5 minutes on a medium flame. Then, transfer the semolina in a plate.

In a same vessel pour some oil. Once oil gets heated, add mustard seeds. When it’s started fluttering add urad dal and chana dal. Sauté well. Keep the gas on a slow flame.

Once the colour of Dals gets changed, add asafoetida, curry leaves, chopped ginger. Saute well. Then add chopped green chilies and onion. Sauté well, till onion turn change the colour.

Now add chopped capsicum, small pieces of carrots and tomatoes. Mix well.

Once tomatoes cooked well, add half teaspoon of salt, turmeric powder and Vangi Bhath masala in the mixture. Mix well.

(If you don’t have vangi bhath masala, you can also use sambar masala as option.)

Then, you can add roasted semolina and chopped coriander. Fry well on medium flame. Now add the boil water of green peas which is there on another pot. Mix well on medium high flame and keep a lid on vessel for few minutes. As we have already added salt so no need to add here.

After 2 minutes, remove the lid. Semolina should be perfectly cooked. You can check the taste. Add salt if needed.

Then, add lemon juice and pour some ghee on the top of the khara bhath. Switch off the flame. Mix it well and garnish with coriander and grated coconut.
