Ridge Gourd Chutney.

  • 2 Medium size Ridge Gourd
  • 3 to 4 green chilies
  • 8 to 10 garlic cloves
  • ½ Cup fresh coriander leaves
  • Salt to Taste
  • 1/3 Teaspoon  Mustard seeds
  • ½ Teaspoon Cumin seeds
  • 1/3 Teaspoon Asafoetida
  • 4 to 5 Chopped Curry leaves
  • 1 Big size Chopped onion
  • 1/3 Cup Crushed roasted peanut
  • Pinch of turmeric
  • Oil


First remove the outer part of the ridge guard with the help of peeler. Now make the small pieces of ridge guard.

In a mixture jar, add those pieces, then add green chilies, coriander, garlic cloves and salt. Now make a thick paste. Don’t grind too much.

Now heat a pan on a medium flame, pour oil into it. Once oil heated, add mustard seeds, cumin seeds, asafoetida and curry leaves.  Once seeds splutter, add Chopped onions.  Sauté well.  Cook the onions till change the colour.

Now add pinch of turmeric. Mix well. Now add the ridge gourd mixture into it. Mix well.

Keep lid and allow to cook for 2 minutes.  Then remove the lid. And add crushed or roasted peanut powder into the Chutney. Mix well. 

Check the taste. Add salt if required, remember we already add the salt at the time of grinding.

Again keep lid on it and allow to cook for another 2 minutes. Now the Chutney is ready to serve.

Serve this Chutney with Bhakari and it is amazing to taste it.
