Ingredients:

  • 1 Big size Brinjal
  • Oil
  • 1/3 teaspoon mustard seeds
  • 1/3 teaspoon cumin seeds
  • Pinch of Asafoetida
  • 3 to 4 chopped onion
  • 1 tablespoon ginger garlic and green chili paste
  • 1 tablespoon red chili powder or kanda lasoon masala
  • 1 teaspoon cumin coriander powder
  • 1 teaspoon garam masala powder
  • 1/3 teaspoon turmeric
  • Salt
  • 1/3 cup roasted peanut powder
  • Chopped coriander

Method:

For vaang bharit you may always choose a big size brinjals. Do not buy brinjals with hole because it might be have a worms from inside. So buy fresh brinjals for bharit.

Wash the brinjal then make vertical cuts on it with knife. Apply some oil. Keep the tandoor jali on a gas with a slow flame. Now keep the brinjal on this jali.

Roast it from all the sides. Apply some more oil if needed. Turn the brinjal upward and downward for roasting evenly. Roast the brinjal till their skin gets grilled and cooked from inside.

Once brinjal is cooked switch off the gas. For this process it will take at least 15 minutes.

Keep the brinjal in a plate and allow to cool. Once it cool. Apply some water to the hand and peel the brinjal skin. Once the total skined off, cut the brinjal with knife. Check it from inside whether worms are there.

But as you can see brinjal which I took is totally fresh from inside. If you don’t want seeds you can also remove the access seeds from the brinjal. Choppe the brinjal with knife. Keep aside.

Now heat a pan on a medium flame. Pour oil. Once oil heated add, mustard seeds, cumin and asafoetida. Once seeds splutter add, chopped onion. Cook the onion till change the color. Now add ginger garlic and green chili paste. Mix well.

Add kanda lasoon masala, turmeric, garam masala and cumin coriander powder. Sauté well. Now add chopped brinjal into the masala. Add salt on it. Stir well. Keep lid on the pan and allow to cook on a slow flame for at least 5 minutes.

After 5 minutes remove the lid add, roasted peanut powder. Mix well. Add chopped coriander for garnishing.

The delicious “Vangyache Bharit” is ready to serve.

Serve with bhakri, onion and green chili.
