Ingredients:

  • For Masala Paste:
    • 2 chopped onion
    • 1 chopped tomatoes
    • 1 inch ginger
    • 7 to 8 garlic cloves
    • 4 to 5 Dry Red Chillies
    • 9 to 10 Cashew Nuts
    • 1 teaspoon melon seeds
    • 2 tablespoon oil
    • Small stick cinnamon
    • 1 bay leaf
    • 4 to 5 cloves
    • 4 to 5 peppercorns
    • 1 teaspoon cumin seeds
    • 1 green cardamom
    • ½ teaspoon salt
  • 2 tablespoon butter
  • 2 chopped green chilies
  • ½ bowl sliced capsicum
  • 1/3 cup of sliced carrots
  • ½ bowl green peas
  • 1 cup finely sliced cabbage
  • 100 gm sliced Paneer
  • 1 teaspoon red chili powder
  • 1 tablespoon garam masala powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • ½ teaspoon turmeric
  • 1 tablespoon kasuri methi
  • 1 tablespoon fresh cream
  • Salt
  • 1 glass hot water
  • Chopped coriander

Method:

Head a kadai on a low flame. Add oil, once oil heated add cumin seeds, cloves, peppercorn, cinnamon, green cardamom and bay leaf. Then, add chopped onion, garlic and ginger. Sauté well for minute. Now add melon seeds, cashew and dry red chilies. Mix well and allow cooking for 5 minutes. Then add chopped tomatoes and ½ teaspoon salt. Cook this mixture till tomatoes gets mushy.

Now switch off the gas. Allow to cool. Remove the dry spices from this mixture. Now grind this mixture from the mixture grinder till smooth paste.

Now heat a kadai, add butter. Once butter melted, add chopped chilies. Sauté well. Now add sliced capsicum, carrots and green peas. Add salt on these veggies. Mix well. Keep lid on the kadai and allow cooking on a slow flame. After 3 to 4 minutes add sliced cabbage. Mix well and keep stirring.

Now add red chilli powder, cumin coriander powder, garam masala powder and turmeric. Mix well. Add some crushed kasuri methi. Stir well.

Now once veggies cook, add onion masala paste on it. Mix well and allow cooking for 2 minutes. Now add fresh cream on it and mix well. Add water. Cook it for another 4 to 5 minutes and garnish with chopped coriander.

Switch off the gas.

Serve with naan or roti.
