Vegetable Kofta biryani

Ingredients:

  • For Vegetable kofta:
  • Mix boiled vegetables: potatoes, green peas, cauliflower, carrots, beetroot etc. Boiled then with ½ teaspoon salt.
  • 1 teaspoon red chili powder
  • ½ teaspoon turmeric
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala powder
  • Salt
  • 1 tablespoon besan
  • 1 chopped onion
  • 2 chopped green chilies
  • Chopped coriander
  •  1 teaspoon crushed coriander seeds
  • For cornflour slurry: 2 tablespoon cornflour and water
  • Curd mixture:
  • 1 bowl thick curd
  • 1 tablespoon red chili powder
  • 1 teaspoon garam masala powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • Salt
  • For boiled rice:
  • 2 cup basmati rice
  • 1 liter water for boiling rice
  • Salt
  • 2 tablespoon Lemon juice
  • 1 teaspoon cumin
  • 1 green cardamom
  • 1 inch cinnamon stick
  • 5 to 6 cloves
  • 5 to 6 black pepper
  • 1 bay leaf
  • 1 star phool
  • 1 tablespoon oil
  • For making biryani:
  • 2 chopped onion
  • 2 chopped tomatoes
  • 2 To 3 tablespoon ginger garlic paste
  • 4 to 5 tablespoon oil
  • 1 teaspoon cumin
  • 2 bay leaf
  • 1 star anise
  • 5 to 6 cloves
  • 5 to 6 black pepper
  • 1 Black Cardamom
  • 1 inch cinnamon stick
  • Chopped coriander
  • Salt
  • 1 teaspoon red chili powder
  • ½ teaspoon turmeric
  • 1 tablespoon biryani masala
  • 1 teaspoon cumin coriander powder
  • 4 To 5 tablespoon ghee
  • 1 cup fried onion

Method:

Wash the rice 3 to 4 times and soaked for 30 minutes in water.

Now will start preparing for kofta.

Take a mixing bowl.  Add boiled veggies.  Smash them properly.  Add all the spices and mix well. Now make small size koftas. Keep this koftas in fridge for 15 minutes for setting.

After 15 minutes, heat a kadai with oil. Make cornflour slurry, deep the koftas into it and put into the oil for frying. Fry the koftas till crisp. Like this make all the koftas.

Now other side heat water for cooking rice. Add salt, oil and dry spices in the water. Keep it for boiling.

For making curd mixture, in a mixing bowl add curd, red chili powder, garam masala and cumin coriander powder.  Mix well.

On the other hand. Heat a pot for making biryani.  Add oil. Once oil heated add all the dry spices.  Add Chopped onion.  Cook the onions till change the color.  Then add ginger garlic paste.  Mix well. Now add Chopped tomatoes.  Cook till tomatoes mushy.  Add some salt and red chili powder, turmeric, biryani masala. Mix well. Now add curd mixture into it. Mix well. Add some Chopped coriander.  Allow to cook for 2 minutes.  Then switch off the gas.  Now place the koftas on the top.

Now check water is boiled or not. Once it boiled add 2 tablespoon lemon juice. Then, add soaked rice.  Mix well. And allow boiling the rice. Once rice cook 90%, takes the one portion of rice and add on the top of the kofta mixture. Spread some fried onion, chopped coriander on the rice. Then, add another portion of cooked rice on the top. Then, again Spread fried onions and chopped coriander.

Now add spoonful of ghee on the top of the biryani.  Also add 1 cup of boiled water on the biryani.  Now keep the lid on tava and put some weight on it.

Switch on the gas. Steam the biryani 5 minutes on high flame. Then, cook for another 10 minutes on slow flame.

Now put this pot on tava and keep the flame slow. Allow to cook for another 10 minutes.

Then, Switch off the gas.

Serve this delicious Vegetable Kofta Biryani with raita.
