Suran Masala Sabji Recipe.

Ingredients:

·      ¼ th kg Elephant Foot Yam

·       1 chopped Onion

·       1 tablespoons Red Chili powder

·       Turmeric

·       1 tablespoons Garam Masala powder

·       Salt

·       Water

·       4 to 5 Dried Kokam (Garcinia Indica)

·       Oil

·       Curry leaves

·       1 Dry red Chili

·       1 teaspoon Mustered seeds

·       1 teaspoon Cumin seeds

·       For masala

ü  ½ cup shredded Coconut

ü 5 to 6 Garlic

ü Small piece of Ginger

ü 1 chopped Tomatoes

ü Coriander

ü 3 to 4 green Chilies

ü 1 teaspoon Oil

Method:

Clean the elephant foot yam/Suran in running water. Remove the skin with the help of knife. After removing the skin, cut it into small or medium size square pieces. Wash again one to two times under running water.

Heat a vessel with a 3 glass of water on a medium flame. Add one tabelspoon of salt into the water. Then add pieces of Yam into the water. Allow to boil till cook the Yam properly. After 7 to 10 minutes, check it is cooked properly or not. Once it cooked, add 4 to 5 pieces of dried kokam. Allow to cook another 2 to 3 minutes. Then, switch off the flame. Allow to cool.  After 10 minutes remove water and dried kokam from the pieces of yam.

For preparing masala, heat a pan on a medium flame. Add shredded coconut. Sauté till golden brown, add chopped ginger, garlic and green chilies into the coconut. Fry another 2 to 3 minutes. For frying this masala, add 1 teaspoon of oil. Now add chopped tomatoes and coriander into the coconut. Fry till tomatoes cook. Then switch off the flame. Allow to cool. Grind the mixture in a smooth paste.

Now heat a pan on a medium flame, pour 2 to 3 tablespoons of oil. Once oil gets heated, add mustard seeds, cumin and dry red chilies. Add curry leaves and chopped onions. Fry till onions cooked. Then add grind masala paste. Fry for 2 minutes. Now add red chili powder, garam Masala powder and turmeric. Mix well. Add salt as per the taste. Mix again. Now add boil pieces of elephant foot yam into this masala. Fry for another 2 minutes. Add little water into the subzi. Keep lid on a pan for 5 minutes. After 5 minutes remove the lid, once oil separated nicely. Mix all the subzi. Add chopped coriander. Mix it.

Serve hot with chapati or phulka.
