Dudhi Halwa Recipe.

·       1 Kg Bottle Gourd ( Doodhi)

·       1 cup Sugar

·       1 cup full fat Milk

·       Half cup mix Dry Fruits ( Cashew, Almonds, Raisins)

·       cardamom Nutmeg Powder

·       ½ cup clarified Butter


First, clean the bottle guard with water, remove the skin with peeler. Now, grate the bottle guard.

Now heat a vessel on a medium flame. Fry the dry fruits with 1 tablespoons of clarified butter. Remove the dry fruits in a plate. Now In the same vessel put half cup of clarified butter. Now add grated bottle guard into the clarified butter. Keep the heat on a medium flame. Mix it with spoon.


Now, the bottle guard start to release the water. We have to fry the grated bottle guard till the water totally absorbed by heat. For this process it will take at least 15 minutes. Once, entire water is absorbed, add sugar. Mix well. Now, on this stage sugar also release the water. Fry for another 5 to 7 minutes.

Then, add 1 cup full fat milk into the halwa. Keep the gas on low to medium flame.

Remember, you have to stir halwa consistently from start to end.

After adding milk. Allow to cook the halwa for another 10 minutes. In-between add crushed dry fruits and cardamom nutmeg powder into the halwa. Mix with spoon.

Mix till halwa is releasing clarified butter. You can see, after 25 to 30 minutes halwa will be cooked well and it will start releasing the clarified butter from their edges.

Once halwa look sticky. Switch off the flame.  

Halwa is ready for serving. Garnish with crushed almonds and cashew
