Maharashtrian Kothimbir Vadi.

Ingredients:

  • 1 big bowl fresh coriander
  • 1 finely chopped onion
  • 1 tablespoon ginger garlic chili paste
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin coriander powder
  • 1 teaspoon garam masala powder
  • ½ teaspoon asafoetida
  • ½ teaspoon fennel seeds
  • Turmaric
  • Salt
  • 1 Tablespoon Sesame seeds
  • Oil
  • Flours:
    • 1 cup Gram flour
    • 2 tablespoon rice flour

Method:

Wash Coriander in fresh water. Remove all water. Cut finely and transfer it in a bowl. Now add Chopped onion, red chilli powder, turmeric, cumin coriander powder, garam masala powder, ginger garlic chilli paste, sesame seeds, fennel seeds and salt. Mix well.

Now add gram flour and rice flour. Make dough. Now spread this mixture in a steamers thali. Spread some sesame seeds on top. Keep the thali in a steamer or cooker and cook for 15 minutes on a medium flame.

Once it cook switch off the gas and allow cooling down.

Now with the help of knife cut a rectangular shape vadi.

Heat oil for frying.  Once oil heated add vadi one by one. Fry from both the sides.

Serves with coconut Chutney.
