Palak Vegetable Pulao.

  • 1 Bowl Palak Puree
  • 2 Cup Basmati  Rice
  • 2 Chopped Onion
  • 2 Tablespoon Ginger Garlic Paste
  • 2 Chopped Green Chilies
  • 2 Chopped Tomatoes
  • Vegetables:
    • ½ Cup Green peas
    • ½ Cup Cauliflower
    • 1/3 Cup Sliced Carrots
    • 1/3 Cup Pieces of French Beans
  • 1 Tablespoon Red Chili Powder
  • ½ Teaspoon Turmeric
  • 1 Teaspoon Cumin Powder
  • 1 Teaspoon Coriander Powder
  • 1 Tablespoon Garam Masala Powder
  • Salt
  • Chopped Coriander
  • 4 Tablespoon Oil
  • 1 tablespoon Ghee
  • 4 Glass boiled water
  • Dry Spices:
    • 1 Teaspoon Cumin
    • 1 Teaspoon Mustard Seeds
    • 2 Bay Leaf
    • 7 to 8 Black Pepper
    • 4 to 5 Cloves
    • 1 Star Anise
    • ½ Lemon Juice.


Wash the basmati rice and soaked for 15 minutes.

Heat a pot on a medium flame. Add oil. Once oil heated add, mustard seeds, cumin seeds and other dry spices. Once all splutter, add chopped onion and green chilies. Sauté well till onion changes the color.  Add ginger garlic paste. Cook till raw smell goes. Add chopped tomatoes. Cook the tomatoes till mushy.

Now add all vegetables and 1 teaspoon salt. Mix well. Keep the lid on the top. Allow the veggies to cook for 2 minutes. Now add red chili powder, turmeric, cumin coriander powder and garam masala powder.  Mix well.

Now add palak puree and chopped coriander on it.  Sauté well.

Add soaked rice and 1 tablespoon salt on it. Mix well.

Add boiled water on the rice. Stir well. Allow to boil. Keep the gas on a medium flame only.

Once nice boil came, add lemon juice. Once rice drank the water, checked whether rice cook or not. If the rice cooks well, keep the lid on the pot. Keep the gas on a low flame.

Add water if required.

After 2 minutes lid off the pot.

Mix the rice well. Add chopped coriander and ghee on the top of the rice. Heat a tava and keep the pulao pot on the tava and keep it for 4 to 5 minutes. Switch off the gas.

Serve the delicious Palak Vegetable Pulao with Raita and Papad.
