Paneer Do Pyaza Recipe.

Ingredients:

  • 250 gm Paneer ( Square Pieces)
  • 3 sliced Onions
  • 3 chopped Tomatoes
  • ½ cup Curd
  • 1 tablespoons red Chili powder
  • ½ teaspoon Turmeric
  • 1 tablespoons Garam Masala powder
  • ½ tablespoons Cumin coriander powder
  • 1 tablespoons kasuri Methi
  • 2 tablespoons clarified Butter (Ghee)
  • 1 tablespoons Oil
  • 1 teaspoon Cumin
  • 1 Bay leaf
  • 1 green Cardamom
  • ½ inch Cinnamon
  • 4 to 5 Black paper
  • 2 Cloves
  • ½ teaspoon Asafoetida
  • Salt to taste
  • Chopped Coriander.
  • For tadka/ tempering:
  • 1 Tablespoon Clarified Butter (Ghee)
  • 1 teaspoon Cumin
  • 1 teaspoon crushed Coriander seeds
  • 1 or 2 slit green Chilies
  • 1 red Chili
  • 1 Onion ( square shape)
  • 1 teaspoon Garam Masala powder.

Method:

Heat a kadai on a medium flame. Pour two tablespoons of oil. Add paneer pieces into the oil. Fry the pieces till golden.

Remove the paneer from the kadai. Now add ghee. Once ghee got heated, add cumin, bay leaf, green cardamom, black paper, cloves and asafoetida.

 Once cumin sputtered, add sliced onions. Cook the onions on a very slow flame till golden brown.

Then add Ginger garlic paste and turmeric. Mix well. Then, add chopped tomatoes. Cook the tomatoes till mushy.

Slow the gas flame. Take a mixing bowl add whisk curd, red chili powder, cumin coriander powder, Garam Masala powder. Mix all the spices in a curd. Pour the curd mixture into the onion tomato mixture. Mix well. Stir it continuously, till oil get separated. Add ½ glass of water and salt. Cook for 5 minutes.

Then add crushed kasuri methi. Mix again. Then add paneer pieces. Mix well. Keep the gas on a slow flame.

On the other hand, heat a tadka pan. Pour 1 tablespoons of ghee. Once ghee heated add cumin seeds, crushed coriander seeds, 1 slit green chilies, 1 red chili and 1 teaspoon Garam Masala. Then add square pieces of onions. Saute well for a minute. Don’t cook the onions completely. Fry till golden colour appears. Then pour this tadka on a paneer. Mix well. Add chopped coriander for garnishing. Switch off the flame.

Serve hot paneer do pyaza with phulka or naan.
