PANEER VEGETABLE TIKKI.

Ingredients:

  • 4 Big Size Boiled Potatoes
  • 200 gms Fresh Paneer (Cottage Cheese)
  • 2 Chopped Capsicum
  • 1 Shredded Carrot
  • 2 Chopped Green Chilies
  • 1 Big size Finely Chopped Onion
  • 1 Tablespoon Ginger Garlic Paste
  • ½ Teaspoon cumin
  • 1 Tablespoon Red Chili Powder
  • 1 Teaspoon Cumin Coriander Powder
  • 1/3 Teaspoon Turmeric
  • ½ Tablespoon Garam Masala Powder
  • 1 Teaspoon Chaat Masala
  • Chopped Coriander
  • Salt to taste.
  • Oil
  • For Corn flour Slurry:
  • 3 to 4 Tablespoon Corn Flour
  • 1/3 Teaspoon Red Chili Powder
  • Water

Method:

Heat a pan on a medium flame. Pour 1 tablespoon of oil. Once oil heated add Cumin seeds. Once seeds splutter add, chopped chilies and onions. Cook the onions till change the color. Sauté well.

Then, add ginger garlic paste into the onion. Mix well. Now add chopped capsicum and shredded carrots into this mixture. Add some salt. Mix well. Keep the lid on the pan and allow to cook for 5 to 7 minutes on a slow flame. Once veggies cook, mix well and switch off the gas.

Now take one mixing bowl. Add smashed potatoes and shred the paneer. Now add all the dried spices.  Like add, red chili powder, turmeric, cumin coriander powder, garam masala powder, chaat masala, chopped coriander and some salt. Then, add capsicum and carrot mixture into it. Mix well. (We already add the salt into the capsicum and carrot mixture. So remember, add the salt on the potatoes as per the taste.)

Mix well. Now our tikki mixture is ready. Now make a diamond or round or heart shape of tikkies. Keep this tikkies in the fridge for 15 minutes.

After 15 minutes remove the tikkies from the fridge.

Heat a nonstick pan on a medium flame. Pour some oil in the pan.

Here I am shallow frying the tikkies, so I am not using too much oil for frying.

If you like the tikkies dip frying then you can goes with more oil.

In a mixing bowl, add some corn flour for making slurry. Add red chili powder and water. Slurry should be runny and not too thick.

Once oil heated, dip the tikkies into the slurry and place it in the pan. Keep the gas on a medium flame. Fry the tikkies from the both the sides till golden brown and crunchy. Once it fry properly, remove it from the pan. And fry another slot of tikkies.

Fry all the tikkies and serve hot with chutney or tomato ketchup or salad.
