·      1 cup Semolina

·       1 cup flattened Rice

·       2 cup Buttermilk

·       1 teaspoon Salt

·       ½ teaspoon ENO


Take a mixing bowl, add flattened rice then, add 1 cup buttermilk. Keep aside.


Now heat pan on a medium flame, dry roast the semolina and transfer it to soaked flattened rice. Mix it. Now add 1 cup buttermilk into this mixture. Mix once again. Keep aside for ½ hour.


After ½ hour, transfer the soaked semolina in mixture jar. Add salt and water. Make a smooth batter like dosa batter.


Transfer the batter in a bowl. Now the appam batter is ready.

Heat a dosa pan on a medium flame. Grease the pan with oil. Pour full ladle of batter on a pan. Don’t spread it. Allow to cook on a slow flame, sprinkle some clarified butter on the appam. After 2 minutes, you can see the edges of appam comes up. Do not turn the appam from another side. You have to cook from one side only. Once it completed remove from the pan.


Again pour the batter on a pan and make all the appam like this way.

Important tip: You can enjoy this delicious appam after cool down. It will stays very soft and spongy for the entire day.

Eat with coconut chutney, Kara Chutney or peanut Chutney.
