Ingredients:

  • Vegetables:
  • 4 to 5 Small size Potatoes ( Aloo)
  • 250 gms Purple Yam (Baingani Jimikandh) (optional)
  • 5 to 6 Medium size fresh brinjal (Baingan)
  • 1 Long size sweet potato (Ratalu)
  • 50 to 100 gms flat green beans (Papadi)
  • 100 gms tendli
  • For Masala Stuffing:
  • 1 Bowl grated coconut
  • ½ cup peanut powder
  • 2 tablespoon white sesame seeds
  • 1 tablespoon carom seeds
  • Chopped coriander
  • 2 tablespoon ginger garlic and chili paste
  • 2 tablespoon red chili powder
  • ½ teaspoon turmeric
  • 1 tablespoon cumin coriander powder
  • 1 tablespoon garam masala powder
  • Salt
  • ½ teaspoon sugar
  • 1 tablespoon oil
  • Chopped coriander
  • 5 to 6 tablespoon oil
  • 1 tablespoon cumin
  • 1 tespoon carom seeds
  • 1 teaspoon asafoetida
  • 2 big size tomato puree

Method:

First will prepare the masala for stuff the vegetables. Take one plate, add grated coconut. Now add all the ingredients on it. Add, peanut powder, sesame seeds, carom seeds, ginger garlic chili paste, chopped coriander, red chili powder, turmeric, cumin coriander powder, garam masala powder, salt, sugar and oil. Keep this masala little bit salty in taste. After adding oil mix the whole mixture. Keep it aside.

Now clean the all veggies. Peel out the skin of potatoes, sweet potatoes and purple yam. Wash it cleanly in water. Cut the purple yam and sweet potato in square shape. You make the four cuts, into the potatoes and brinjal and tendli.. Cut the flat green beans in two pieces.

Now all the veggies are ready. Will start filling the veggies, before that make a two portion of the masala. Here, we using a one portion for filling the masala in veggies and remaining one will use at the time for cooking the subji.

Now fill the masala in brinjals, tendli and potatoes. And apply the rest of the masala to the purple yam and sweet potato.

Now heat a pressure cooker on a medium flame, add oil. Once oil heated add, cumin seeds, carom seeds and asafetida. Once cumin seeds splutter add tomato puree. Stir it and allow to cook for 3 to 4 minute. Now add flat green beans. Mix well. Add little turmeric on it. Now add the second portion of masala which we keep aside. Stir it for at least 2 minutes.

Now place the all stuffed veggies on this. Stir it. Now add 1 glass of water. And mix it.

Now lid on the cooker. And allow to cook for till 3 to 4 whistles.

Once cooker cool it down, open the pressure cooker. And serve the subji with phulka or roti or puri.
