  • For stuffing
  • 2 big size boil potatoes
  • 1 cup boiled green peace
  • 1 tablespoon ginger garlic green chili paste
  • ½ teaspoon Fennel seeds ( Sauf)
  • 1 teaspoon red chili powder
  • 1/3 teaspoon turmeric
  • 1 teaspoon cumin coriander powder
  • 1 teaspoon garam masala powder
  • 1 teaspoon aamchur powder
  • Salt
  • Chopped coriander
  • For covering:
  • 1 bowl all-purpose flour ( Maida)
  • Pinch of salt
  • 2 tablespoon oil
  • 1 tablespoon semolina ( Rava )
  • Water for kneading
  • 1 teaspoon carom seeds


First we knead the dough for making outer covering. Take a maida in a mixing bowl, add salt, oil, carom seeds, semolina. Mix well.  Now add water for kneading.  Use small small quantity of water.  Be sure dough should be tough, not too soft. Keep this dough for rest at least for 30 minutes.

Now we start to prepare for stuffing.  Now in a mixing bowl add boil potatoes and green peace. Smash them both, then add red chili powder, turmeric, cumin coriander powder, garam masala powder, aamchur powder, fennel seeds, ginger garlic chili paste, Chopped coriander and salt. Now mix well. The stuffing for ghugra is ready.

Now check the dough after 30 minutes.  And knead it again. Make a small balls. Then, with the help of roller make the poories.

Now add spoonful of stuffing in the center of poori. And fold the poori in a semicircle. Close the edges. And make a folded design from the boarder.

Like this make all the ghugra.

Heat the kadai on a medium flame. Add oil for deep frying the ghugra. Once oil heated, keep the gas on a slow flame.  Now add ghugra in the oil for frying. Fry this ghugra on a slow flame.  Fry this till golden brown and make it crunchier. 

Once it’s ready, serve hot with mint Chutney and tomato ketchup.
