  • Vegetables:
    • 6 Small Size brinjal (Baingan)
    • 3 to 4 Long Chilies (Bharva Mirchi)
    • 2 Carrots (Gajar)
    • 1 Big size Potato ( Aalu)
    • 2 Onion (Pyaz)
    • 10 to 15 Ladyfinger (Bhendi)
    • 10 to 15 Cluster Beans ( Gavar)
  • ½ Bowl Onion Paste ( 2 to 3 Onion)
  • ½ Bowl Tomato Puree (2 Tomatoes Big Size)
  • 1 Tablespoon Ginger Garlic Paste
  • 2 Chopped Green Chilies
  • 1 teaspoon Cumin
  • 1/3 Teaspoon Asafoetida
  • 1 Tablespoon Red chili powder
  • ½ Teaspoon turmeric
  • 1 Teaspoon Cumin Powder
  • 1 Teaspoon Coriander Powder
  • ½ Teaspoon Fennel Seed Powder
  • 1 Teaspoon Garam Masala Powder
  • 1 Teaspoon Kasoori Methi
  • ½ Teaspoon Aamchur Powder
  • Chopped Coriander
  • Salt
  • ½ glass water
  • Oil


Wash all the vegetables. Make cuts in brinjal , lady finger and chilies.

Make long slices of carrots and potatoes.

Remove the tops of cluster beans.

Cut the onions in 4 parts.

Now heat a kadai. Add oil. And fry the vegetable with some salt till it become soft. Once all the veggies fry remove it from the pan.

Now in a same pan, add some oil. Once oil heated add cumin seeds, chopped green chilies and Asafoetida. Now add onion paste. Sauté well. Add ginger garlic paste. Cook till raw smell goes.

Now add tomato puree and salt. Mix well. Once this mixture cook well. Add red chili powder, turmeric, cumin coriander powder, fennel seeds powder, garam masala powder, aamchur powder and kasuri methi. Mix well.

And add ½ glass of water and cook for some minutes. Once all the spices cook. Add fried vegetable into this masala.

Mix well. Keep the lid on the kadai and cook for 5 minutes. Garnish with chopped coriander.

Serve with naan or roti.
