Vegetable Nizami Handi.

Ingredients:

  • Vegetables:
    • ½ cup Cauliflower
    • 1 sliced carrot
    • ½ cup green peas
    • ½ cup corn
  • For gravy paste:
    • 3 to 4 tomatoes
    • 1 green chili
    • 6 to 7 garlic cloves
    • 1 inch ginger
    • 8 to 10 cashew
    • ½ teaspoon salt
    • Oil
  • 3 to 4 chopped onion
  • 200 gm paneer
  • ½ teaspoon cumin
  • 1 bay leave
  • 1 green cardamom
  • Small piece of cinnamon
  • 1 tablespoon red chili powder
  • ½ teaspoon turmeric
  • 1 teaspoon cumin coriander powder
  • 1 teaspoon garam masala powder
  • 2 tablespoon fresh cream
  • Chopped coriander
  • 1 teaspoon kasoori methi
  • Salt
  • 2 tablespoon oil
  • 2 tablespoon ghee.

Method:

For gravy, heat a pan and add some oil. Once oil heated, add Chopped tomatoes, garlic, ginger, cashew and green chilies. At the time frying this masala add some salt. Cook on a low flame for at least 10 minutes.  Once tomatoes cook well switch off the gas. Allow to cool down. Add this mixture in grinder and make fine paste.

Now in a same pan fry and half cook the all veggies.  Add salt and Turmeric during frying. Add paneer cubes with veggies. Switch off the gas.

Now heat a kadai, add oil and ghee. Once oil heated add cumin, bay leaf,  cinnamon and cardamom.  Now add Chopped onion.  Mix well. Add some Chopped coriander and salt. Fry the onions at least 15 minutes on a low flame.

Very important note: Frying onions on a low flame make subzi tastier.

Once onion perfectly cooks, add all the spices. Red chili powder, turmeric, cumin, coriander powder,  garam masala powder and mix well. Add very little quantity of water to cook the spices. Stir well for 2 to 3 minutes. Add tomato paste. Mix well and cook for another 2 minutes.

Now add fresh cream and kasoori methi. Mix well. Add 1 glass of water. Mix well. Once boil come add all the fried veggies and paneer. Mix well. Add water if needed. Keep the flame low. Allow to cook for another 5 minutes.

Check the taste. Add salt if needed. Because we added the salt in tomato paste, fried veggies and also in the chopped onions at the time of cooking Subji.

After 5 minutes switch off the gas.

Serve Vegetable Nizami Handi with roti.
