Vegetable Sambar Recipe.

Ingredients:

·      1 cup Yellow pigeon piece (Toor Dal)

·      ¼ th cup of split and skinned green gram (Moong Dal)

·      1 chopped onion

·      1 chopped tomatoes

·      4 to 5 chopped garlic cloves

·      Small piece of chopped ginger

·      Curry leaves

·      1 teaspoon Mustard seeds

·      1 teaspoon cumin seeds

·      Asafoetida

·      ½ tablespoon red chili powder

·      1 teaspoon of turmeric

·      2 to 3 tablespoons sambar masala

·      2 tablespoons tamarind pulp

·      Salt

·      Vegetable:  

  ü ½  cup of pumpkin ( chopped in square pieces)

     ü 1 brinjal ( chopped in square pieces)

     ü Drumsticks with long pieces

     ü You can also use lady finger, Bottle gourd 

Method:

Wash both the Dals together and boil into the pressure cooker with 3 vessel.

 

Heat a pot on medium flame. Pour 2 tablespoons oil. Add mustard and cumin seeds once oil heated. Now add asafoetida, curry leaves, chopped onions. Fry till onion turns golden. Now add all the cut vegetable and chopped tomatoes. Fry all the vegetables for a minute. Add turmeric, red chili powder and salt for taste into the vegetables. Mix well.

 

Cover the pot with a curve plate and pour half glass of water in the plate. The reason keeping water on the top of the pot, it help to cook the vegetables easily from all side.

On the other side take a boiled dal, add 4 tablespoons of sambar masala and tamarind pulp. Mix well with spoon. Avoid forming lumps.

 

Now check the vegetables. Remove lid. Once vegetables look half cook, pour all the mixture of Dal into this vegetable. Add some more water. Mix well. Add salt for taste. Remember, we already added some salt in vegetables.

Stir it. Allow to boil for at least 10 minutes. Once, vegetables cook completely.  Garnish the sambar with chopped coriander.

Serve hot.

You can have sambar with idli, plain Dosa, masala Dosa, medu vada and also with plain steam rice.
